No need to create separate "boots" or OS X installs.
Just use separate user accounts. That's what they're there for!

Thanks William for the quick reply.
Having separate accunts is fine in the long run, but in the short term, I want to be able to download my son's apps and music into iTunes for him, but Apple already recognise an Apple ID on the Mac so any purchases made now will be blocked for 90s if the otther account is used.
So, will having a dual boot option work in the very short term?

I think you may be confusing different uses of the Apple ID: for example, you talk about using an Apple ID when "setting up" a Snow Leopard install, and make reference to iPad and iPod. Where are you making changes to the Apple ID?
