Why can't I upload a more current version of iTunes 10.6.3 for my mac?

I'm trying to put music on my new iPhone 4S, but am unable to because I need to download at least iTunes 10.6.8. I can't update anything more current than 10.6.3 because my mac keeps saying it is the most current version. Why is that? What can I do to get a more current version??

If you have an iPhone 5 and not a 4S, you need to upgrade the computer's OS.
