I NOTICE I HAVEN'T RECEIVED AN UPDATE ON MY IPOD TOUCH 3RD GENERATION AFTER THE IOS 5.1.1. IS THAT THE LAST UPDATE I WILL RECEIVE ON THIS DEVICE?

As Csience1 said, you can use the device without any problem, but you won't be able to download applications that requires iOS 6 or newer
