A question about a screen protector

So one of the screen protectors for the Ipod Nano says, "Smooth, non-sticky surface with patented layer of UV protection to prevent "yellowing"" What does it mean by yellowing? Is the ipod screen kept from yellowing, or the screen protector itself?
