I have moved to Mexico for 6 mos.
Will I have any trouble using my Apple products down here? I purchased everything while living in Alaska.

Check if Mexico is included in the list of countries.. Apple regionalise their products and you cannot change it.
I am in Australia but NZ is always the default.. this is in wireless options.. but of course this is using v5 utility.. finding anything in v6 utility is needle in haystack or maybe non-existent.
Pretty sure they will cope with NA setting on the wireless.
