Mid 2007 24" iMac, model 7,1, 4GB memory and 1TB hard drive
I have Mountain Lion OS X installed, I wanted to add Windows 7 on this. What's the best way of doing this? Do I need 32 or 64 bit disc?

Welcome to the Apple Support Communities
First of all, check if you need Boot Camp or a virtual machine > https://discussions.apple.com/docs/DOC-3321
If you need Boot Camp, check if your Mac supports the 64-bit Windows version > http://support.apple.com/kb/HT1846?viewlocale=en_US&locale=en_US If it's supported, use the 64-bit version because all the hardware will be detected and increases the performance if you have an Intel Core 2 Duo processor or newer.
If you need a virtual machine, open > About this Mac, and check Processor. If it's an Intel Core 2 Duo, Intel Core i3, Intel Core i5 or Intel Core i7, use the 64-bit Windows 7 version
I can't find the Intel Core info. I do have the following:
Processor 2.4 GHz Intel Core 2 Duo
Memory 4 GB 667 MHz DDR2 SDRAM
Graphics ATI Radeon HD 2600 Pro 256 MB
Software OS X 10.8.2 (12C60)
You can't use the 64-bit version on Boot Camp, but you can use it on a virtual machine without any problem. However, Boot Camp uses all the hardware so it's much faster on your Mac
So the 32 bit would be fine?
I have used VM's before, really didn't like it, I had more problems doing that.
For your computer, the 32-bit version will work correctly
I recommend the retail edition, but the OEM version works correctly
Would Windows 8 work on this?
At the moment, Boot Camp isn't compatible with Windows 8, so I recommend you to install Windows 7 until Apple releases updated drivers supported on Windows 8
