How do i input IP address 192.168.2.1 into safari to access my IP router? Since the update to the operating system removed the Google search and incorporated it with the address bar, it just goes to Google.

Then you are typing in the wrong address. Use 192.168.1.1
99.9999% of all routers use the 192.168.1.1 address not the 192.168.2.1 that you are typing in.
The reason you are getting a google search is because there is NO 192.168.2.1 IP used on your LAN.

On a side note... it does seem crazy that the update to remove the Google search bar and incorporate it with the "regular" address bar did not regressively test this IP address function....... any one else agree with me here? Is it something Apple should incorporate into their next Safari update?

What do you mean it "remains on the home page"?
Do you mean it searched Google instead of going to the address?
Or did it appear that it did nothing? Did it finish loading or did it get stuck like in the screenshot below?
What make and model of router?
It is a SageMCOM F@ST 2864 that Bell Fibe TV uses for its IP TV/Internet?phone service.
My IP address works fine in Safari with my Netgear N900 (aka wndr4500). I'm using Safari in OS X 10.8.2. Chrome uses the same search/address bar setup as Safari.
Michael is right switching to Chrome may not make much difference.
Try FireFox.

Good point - I completely blanked on that, since on my home setup, my wifi router actually is 192.168.2.1, but that's beacuse I set it to that, not because it came that way.
type it in as
http://192.168.2.1(or https:// depending on your router and how you have it configured)

Check your router's documentation or online for that model. It may be something like
http://192.168.2.1/admin or login or something else.
I found some routers not working on Safari and had to install FireFox or Chrome to manage them.
Unfortunately the same thing for both "admin" & "login ..... it just drops the https:// prefix in the address bar and stays on my home page
