Q: Iphone 3G unlocked testing

I want to check my iphone 3G (my old iphone) has been unlocked by o2, but I don't want to lose everything on my old iphone as it is used for my alarm etc (sits in my docking point, unlike my iphone5!).

 

If I "Erase All Content and Settings" and test the unlock, will I then be able to go back to itunes and put my old data (that is now also on my iphone5) back onto the phone?
