I'm just looking into ebooks or ibooks. I've heard with Kindle and Nook, even if you've purchased a book, they can take it away at a later date (something about Digital Rights Management). Is the same true with ibooks for iPad?

I've read a few articles online about it, but haven't read anything specific to Apple's ibooks and cannot find anything about it on the Apple website.
Barnes and Nobel has always advertised the Nook's content as always yours, and always availabel via their online library storage. Now, you can actually delete your own stuff from your online account with B&N, and then it is gone unless re-purchased.
I actually have all my B&N purchased eBooks sitting on my laptop as epub files, using their free OS X Nook program, and those are in turn backed up on my Time Machine drive.
I've had a Nook Color since Dec. 2010 and it has over 150 free and purchased B&N ebooks on it, and I have never heard nor seen anything from B&N nor on their web site that suggests anything like your have "heard".

They cannot take them away from you.
You must be misunderstanding.
Amazon did a number of months ago remove a couple of books from people's Kindles and accounts due to publication rights problems, but was roundly castigated for it and probably won't make that mistake again.
Apple does not have the same level of control over your devices, so while an iBook could be removed from the iTunes Store at any time, Apple could not remove the book from your devices. They could only keep you from re-downloading it.
