Hi I recently switched to pages from Word. I work in documents in English and Spanish primarily. How can I easily switch between the two languages so that spellchecking recognizes the correct one?

You can have multiple languages in a single document, if you wish. Language is a text property, set in the Text Inspector, More tab, Language section.
If you wish to launch Pages in a language other than your System language, there's a third party app for that called Language Switcher. I'm not a user, but it's been discussed here on occasion and I haven't heard any complaints about it.
