How do you set up chapters after all text is written in linear form?

I have written seventy pages of text. Throughout text is inserted 'Bold Text', centerd in page with triple line spacing before and after text. I would think I could use this format to easily determine chapters from such Bold Text. How is the question, I see nothing in reguard to chaptering a linear running text. Please offer guidance.
