I created a EXS24 software instrument and when I record the rhythm that I want, I can hear that I've performed it accurately. But when I go to play it back, it always sounds different than I performed it. Any ideas?

Are you quantizing it inadvertently?
Possibly, It just happened again today but it was with another software instrument. When I recorded it I was playing one 8th note then two 16th notes on every beat, but when I play it back it was all eighth notes. How do I find out if I'm inadvertently quantizing? Thanks.

Sounds like you have set the 'MIDI Thru' quantise to 1/8 notes.
Click in the background of the Arrange to deselect all regions. In the Region Parameters at the top of the Inspector (where it says MIDI Thru), change the quantise setting to 'Off - 3840'.

Awesome, this was the cure. Thanks! Is it a good rule of thumb to always have the Quantize off in the MIDI thru options and then quantize everything in the piano roll eidtor?

It depends if you want to "auto quantise" as you work or not. It is one less thing to do when you have it on, just choose the correct Q value for the rhythm you are recording.

If you use the region parameters in the Inspector, you can quantise the whole region in one go, without the need to go to the Piano Roll.
That said, in the Editors, you can selectively quantise/dequantise.
Regardless of your workflow, quantisation is normally non-destructive, so you can change your mind.
