I bought my daughter an ipod touch 5 and set it up with my apple ID. My contacts were listed on her ipod. She deleted the contacts on her phone which in turn deleted the contacts on my phone. I synced my phone before I realized that my contacts were gone!!
Is there anyway to get those contacts back?

It sounds like you both used the same icloud account to sync your devices. Unfortunately, when you delete a contact on one device, it's removed from all connected devices and from icloud. There's no way to retrieve them unless you have made a backup of a computer that also had the contacts stored. An icloud backup does not include contacts, email, calendars, etc. when the data is part of iCloud.
If you do not have a backup then it's gone.
For your daughter, you should only use the same Apple ID for purchases in Settings > iTunes & App Stores > Apple ID.
Switch off iCloud in Settings > iCloud, or at least use a different Apple ID here.
I have synced my phone with my computer about a month ago and then again today. When I try to restore my phone it will only show today's date as backup. Is there a way to go further back to previous back ups?

Deleting ipod touch 5 contacts also deleted my iPhone 4s contacts.
