Take a look at the appstore, most games do not require wifi to play, although you do need wifi to download the game initially. Try searching for the type of game your looking for. Or go to the catagories section and brows them there. Unless the description says that it is an online or multiplayer only game then it is most likely to be compatable offline.

Tons of them.

If you see a game you like ask the developer if it's internetless. Or if they have a free version, get that, then turn off the wifi on your Touch (or put it in airplane mode) and give the game a play.
