Instructions for how you can add a signature to a PDF document, can be found in “Previews” help menu. Simply open up “Preview” from the applications folder, and click “help” in the top menu bar, then “Preview Help”. In the top right search area, type “Sign a PDF document” then “fill out a PDF form”.

You will see a link for “Sign a PDF document”. Once you have your signature saved, open the document as a PDF, then go to "tools / annotations / signature". This results in your curser becoming a "cross hair". Simply drag this over the area you want your signature to be added to. If you are not seeing this option, it could be that you are running 10.6.8 OS, and it is not built into this OS version

I guess this reply is a little dated but I struggled with trying to get a digital signature on via preview in 10.6.8 snow leopard as well. The solution I finally hit on was to copy each page from preview into a word for mac, and then insert a scanned copy of my signature which I could then print in pdf and send digitally. A bit roundabout, but it worked for me and didn't require me to upgrade OS or install additional software.

Thought I put this down in case anyone else is grappling with this in future!
