i have an ipad and iphone with 3G access on Verizon but keep getting an error stating i cannot connect to Facetime without wireless. What could be going wrong?

You should check with Verizon that FaceTime over 3G is active on your data plan.
i thought all data plans on Verizon now allowed FaceTime?
It also depends on the iPad/iPhone model. iPad2 for example, doesn't support FaceTime over cellular. But yes, you should check with Verizon to verify your plan allows for it.
