I've heard of few very rare cases where iPhones have spontaneously caught fire. If mine freezes at times, often shutting down/restarting, or often acts slow, is there any danger of that?
Basically, what chances are there of an iPhone malfunctioning and catching fire? Am I just being way too overly paranoid?

You're being way too paranoid, if you think your device is defective take it to the closest apple store and have them check it out.
That's like asking "what are my chances of spontaneous combustion?"
dont worry about your iphone catching fire that is like a 1 in a million chance. there is probably a better chance of the world coming to an end on the actual day they predict it to
