Does anyone know how to assign a custom number to a page in Pages '09? For example, I have several documents that are seperate but go together so I want them to be numbered sequentially even though they are in separate files. I have not yet found how to do that. The Pages documentation doesn't mention anything about this particular issue or I haven't found it yet.

Restarting Page Numbering in a Section You can start a new page-numbering scheme for a section.
To restart page numbering in a document section:
Click in the section, select “Start at” in the Section pane of the Layout inspector, and then specify the number of the first page of the section.
I just tried this with a single-section document and it worked.
Make sure you are not in Outline view, or you won't see the Header or Footer, and Inspector won't let you change the "Start at" number.

Have you actually looked?
The Pages09_UserGuide.pdf, available under the Help menu, may not be perfect but it seems to have 90% of what people in these forums claim they can't find.
Also the Inspectors are extremely well organised in a logical big down to details, left to right layout, just waiting for you to look.

In your case, with several separate documents (well done, I like your approach!) a new "section" is your next document. Start page numbering to "Start at" (follow on from) your previous document.
Be aware that if you edit any document, you must go through this process again for all subsequent documents to "Start at" the new page number.
However, that will work.

Yeah, Peter. I actually looked at the pages section because...well... I was trying to change a page number and not particularly a "section." Ian politely pointed out where I could find it.
I never would have thought to look under section for changing a page number. Although, I can see why specifying a page number was placed under the section part if every page is considered a section. I just thought the page settings would be all together.

A page is not a section. You can create a new section by inserting a section break:
In Pages, click on the Insert Menu > Section Break.
That allows you to start a new "chapter" in a book, if you get my meaning. The new "chapter" can have a different look, such as a different number of columns on a page.
However, your "book" consists of a number of separate documents that you will compile and print when you are finished. Keep doing what you are doing.

I looked in the index of the Pages User Guide for "Page numbers".
I also searched the Pages Help for "Page numbering".
If I don't find something the first place I look I then think where else it might be, but I start with the obvious ones.
I am a user like yourself. I wasn't born with the knowledge I have, I just look for the things that people ask here. A lot like being their "Mom".
We get a lot of "Pages can't do…" or "Pages hasn't got…" here.
Assuming it doesn't exist is a sure fire way of not finding something.

First, I don't believe that this is the place to argue about this. However, since you seem to be insisting, I will to a point.
You're quite insulting particularly when you start out by asking if I actually looked. You're also accusing me of several things that you are assuming (unless you have some sort of super power that no one on earth I know has).
My question to you now is: Did you actually look at what I wrote?

Furthermore, if I had assumed that it did not exist, I probably would not have asked the question "Does anyone know how to assign a custom number to a page in Pages '09?" There would be no need since it does not exist.
It seems to me that you are guilty of the very things you are accusing me of.
Additionally, it was a simple question. It seems as though you are overreacting. If you are that upset about answering simple questions that you feel you have to insult the people whom you give an answer to, why bother answering at all?

I read your post, in detail. I always do in an attempt to make out exactly what the poster meant (which is often not what they have posted), and yes I did note your "I haven't found it yet".
You had three elementary resources at your disposal: Help, the Pages09_UserGuide and the well laid out Inspectors.
You could miss one, but all three?
