Send new messages from: "account"

I use Apple Mail as my main client for seven different email accounts. Inevitably, I'm constantly sending email out from the wrong account. I know that I can set it up in prefs to send from a default account or from the current account, but I still forget to change it each time. Has anyone figured out a way to have it ask me each time which account to send from? I know that would be annoying, but I need to be annoyed in order to remember to check.
