Whoops I didn't finish my question!!! I would like to know if it is possible to get iTunes Match and be able to delete what we don't want on our own devices without deleting it off all together. For example, I want my yoga CDs on my iPad, but my 11 year old really doesn't!!!
It works the other way around. Rather than deleting what you don't want from each device, you add what you do.
I think I get it!! Just to clarify..... So it's all stored in iTunes in an iCloud section - and you download on each device what you do want, and the rest is left in iCloud??

Yes that's about it, you have access to everything in your iTunes library, but just download it as you want it.
