We are new to Apple/iMac and we need to install a decent word processing program. I've compared iWork to Microsoft Office, and I think we will go with iWork for what we need. With one purchase, can I install it on all 3 of my small business computers? Can it be installed in iPad?

The Mac OSX version and the iPad versions are separate apps and separate purchases.
The good news is that if you buy them using the same Apple I.D. you can install them on all your computers and iOS devices at no extra charge.
