You can try putting the iPod into DFU mode and see if that will let you restore and remove the jailbreak:

Some jailbreaks cannot be removed and in some cases will permanently disable your iPod. If that happens to you, then you will have to buy a new iPod; Apple will provide no support, warranty or out-of-warranty, for a jailbroken device.

Put your iPod in Recovery Mode and restore the iPod on iTunes. It will reset the iOS firmware.


OR


Settings>>General>>Reset>>Erase All Content & Settings


PLUS if you received any unknown errors on iTunes just give it a few hours or a full day....it means your iPod is trying to repair it self from being JAILBROKEN.
