How to restore DATA from Time Machine Back up to new installation?

My 2008 white 13inch MacBook was running v slow. Have fitted new drive and clean install of OS X and applications.

Have tried to restore my data from the Time Machine backups on External to drive but cannot access "Original Setup" files from the "New" setup.

Presumably they are seen as foreign by the new setup. I Could do a TOTAL restore but this would only restore the slow system!!

Currently I am using the original Drive in a USB enclosure and am copying my photos which is showing 17hrs.

I will also want Itune Library, All my Documents etc.

Any appropriate advice will be appreciated

MacBook, Mac OS X (10.6.8)
