Sorting songs within IPhone 4S

I have itunes 11.0.1 open on my imac with my Iphone 4s connected. Using Itunes on my computer, I can't sort the music on my iphone (i.e sort by album name) or even move songs into playlists on my iphone. Confused. Sorry if there is a thread...I looked but couldn't find anything.
