Is there a way to remove music from iTunes library without removing them from iOS device?

Hello, I decided to organize my music so I removed it from my iTunes library, directly from iTunes, and the music of my ipod touch was removed as well, is there a way to change that? (my ipod was connected to iTunes) and btw, is there a way to just copy files directly to the ipod? I mean, in itunes 10 I used to drag some folders to the ipod and the music was copied only in the ipod, when I do that with iTunes 11 the music I wanted to copy to the ipod is also copied to iTunes, how can I change that?
