My phone number showing "unknown", it is greyed and i can't change it!!!!
I think this is effecting my iMessage and FaceTime, i can't activate them... Neither by my Apple ID, it keeps saying my id is wrong!!!!!!!!
I am using now iphone 5, strangely when i had my iphone 4, didn't have any of this issues!!!

Follow the steps below to resolve your issue:
Goto settings -> Facetime and turn it off
then Settings -> message-> imessage and turn it off
turn on iMessage and allow it to activate and then turn on facetime. The unknown number will be updated.
If the issue persists update to iOS 6 and above and try again
You are already on iOS 6 though as you are using an iPhone 5, so if the above steps dont work, try Settings -> general-> reset -> reset all settings (No data will be deleted, only wallapaper, ringtones, wi-fi password etc. will be set back to default

I believe the iPhone takes the phone number from the Sim Card when you turn iMessage and FaceTime on. This is why Modular recommended that you get a new Sim from your carrier since Sim Cards can sometimes fail.
You also said that the iPhone is not recognizing you Apple ID for iMessage and FaceTime. In order to activate these functionalities, the iPhone sends an international SMS presumably to Apple servers to register your iPhone with the proper Apple servers. Is your plan with your carrier provisioned to send international SMS? If the SMS is failing to send, the iPhone normally says "pending activation" in the iMessage and FaceTime settings and this can go indefinitely.
The only other thing I can think of, because it happened to my sister, is that she changed carrier and got a new number that had been previously used for iMessage and FaceTime by another user who had failed to turn off these services and therefore the number was already in use with another Apple ID. Until the number was deregistered to the other user, my sister could not activate her number to her Apple ID. However, iMessage and FaceTime did work with her email during that time.
In your case, I would check with my carrier that your plan is provisioned to send international SMS and also, I would get a new Sim Card. If it still not working after this, I would restore the iPhone as new and start again.
