How to get iCal to sync to iTunes, iPod touch, and iPhone again?

My iCal no longer syncs with my iPod touch nor my iPhone 3gs. I have tried resetting the devices to factory settings but I think it is an issue with iTunes itself. Here is why I think this: iTunes no longer shows calendars added after a certain point from iCal and it still shows some calendars that I have long since deleted. I had this problem with the prior version of iTunes over the past year.

I currently have 33 separate calendars, 5 are subscription and 2 are from gmail accounts.

I am working with:

iPod Touch 3rd Generation

iOS 5.1.1

Macbook Pro 15-inch, Mid 2010

Mac OS X 10.8.2

iTunes 11.0.1

So 2 questions:

1. Is there any way to refresh or fix the list of calendars in iTunes?

2. Is there any fix that either Apple or anyone else has for this so that I can get my calendars onto my devices?
