Help... I want to sync my music manually from my itunes-not use icloud

The iphone (5) accesses the library via icloud...but I dont always have wifi connectivity to listen to my music, so I am trying to work out how to download the music manually from itunes to my iphone. I cant see any options on itunes or the phone to change the current settings. Quite happy syncing calendars / contacts etc by icloud....but I want to be able to listen to my music at anytime. At one time the music WAS downloaded onto my phone in that way, but changed once I updated the phone or itunes software....Any ideas? Is icloud now an 'all or nothing' option ? ie you cant choose which services to use via icloud or not>
