How can I change the opening screen of Finder? It opens to All Files even though I've deleted All Files from Favorites in the side bar. I want it to show files on Desktop when I open Finder.

My Finder opening screen always defaults to All Files even though I havae deleted All Files from the sidebar menu. I work with several clients under confidentiality and I sometimes have my computer open in meetings. I can't have FInder show all documents that I've been using recently because they include client names in the file titles. One client could accidentally see the names of other clients in the All Files list. I want it to open to a neutral list such as Desktop (which I keep free of client docs). I can't get the opening screen to change default to Desktop (or anything else).
