trying to pull all my photos from my iphone 5 to my pc as back up.
through windows i was able to take everything from camera roll and then delete them on my iphone
there are still photos in the photo stream. how do i get to them?

First, regarding Photo Stream on your Windows PC, see the "How do I view My Photo Stream" section here:
Photo Stream are photos you store in iCloud. Camera Roll is where photos you have taken on your iPhone are stored.
One more thought: On your iPhone, check Settings > Photos & Camera and look at "My Photo Stream" and "Shared Photo Streams". The annotations below those buttons will tell you about movement from camera roll to photo stream.
