When syncing email with Outlook folders, is there a way to change the view from "from" to "Sent to" in the folder views on the iPad?

No, there isn't, at least no way I can find. The Sent folder shows only the recipient. If you need to see the sender, you'll have to tap on the message so you can see the message. Sorry.
