my ipod has the version iOS 4.2.1 and it needs updating so I can download new applications but my version of itunes(the latest) is saying that i have the latest ipod software version, how can I update?

It sounds like you have a 2nd generation iPod. Please verify the model number from the back, if it is A1288, it is a 2nd generation, and can not be upgraded beyond 4.2.1.
I suspect you have a 2G iPod. Those can only go to iOS 4.2.1.
