From the iTunes menu at the top of the screen go to View>Show Sidebar.

After you can see the sidebar, click on your iPad name on the left under the Devices heading, then click on the Photos tab in the iTunes window on the right - at the top of the screen. You should be able to see where the photos are synced from in the Sync Photos From Heading.

Your photos are either in iPhoto (Mac) or Photo Manager (Windows)

1. In the new Itunes you can go to View and select show sidebar.

2. When you plug in your device you should see your iPad.

3. Click on the iPad - you should see a screen like this

Select/deselect the photos you want synced to the iPad.

I am using iTunes 11 - the newest version.

Did you read what I said about going to View>Show Sidebar in the iTunes menu at the top of the screen? Do it and you will see the sidebar.

Then click on your iPad name under the devices heading, then click on the photos tab.
