Grandson gave me his old i-touch. How do I remove songs

Grandson gave me his old i-touch. How do I remove his songs and put on my own? I know his apple ID & password for i-tunes, plus I already have an i-tunes account. Don't know which account to sign in on and once I do, I don't see his device on either one.
