You should be importing them regularly as you would with any digital camera.

You should also be transferring all itunes purchases made on iphone: File>Devies>Transfer Purchases

You should be syncing contacts/calendars/notes.

Are you using a Mac? If so you can import to iPhoto or use Image Capture and import to a folder on the hard drive.
