if i was to buy an iphone in hong kong will it work in the uk?

if i was to buy an iphone 5 in hong kong could i use it here in the uk? im not sure if i will be locked to only using chinese sim cards? or if i buy an ulocked one does that mean i can use it any country on any sim card?
