Typing email addresses into a document

I create a lot of documents that include lists of email addresses.

Can I turn off the function that causes MAIL to open up when I click on or pause too long over a typed email address.

It really makes me crazy when I have to edit email addresses, because about 50% of them open an email document rather than allowing themselves to be editted.

I had thought that "hyperlink" was a reference solely to active web addresses in a document. Is that also the term for "hot" email addresses?

Thanks
