how can I just sync just music

I have an ipad and and ipod - and wish to syn the ipod with "just music" - but when I sync it does everything including all the apps that are on the ipad which I don't want on my ipod as I mainly use for meditation etc?

Any ideas on how to do this would be great?

Also over the past two years some of my songs have reverted from 3 mp to wma? Can I revert back or not? if so how?
