what does default account for notes mean?
Notes, even if they have their own App now on Mac and iPhone (OSX and iOS) they are in sync on the vatious devices via Mail.
Therefore if you have on your Devices more than one Mail account you need to select which one will be used to sync notes. I would suggest iCloud but there are also alternatives if your other mail accounts let you use Notes.
