color fill text boxes using inspector

When I create a text box and want to fill it. I select the text box, choose inspector, click the graphic tab, and the "color fill" under fill. But, after I do this once, I can't seem to change the color from this panel. I can choose one of the other pop up menus (gradient, for example). I can only change the basic color from the fill box in the main menu bar. What am I missing?

MacBook Pro (15-inch Mid 2010), Mac OS X (10.6.8), 15" 2.66 GHz Intel Core i7 4GB AG
