So I stupidly updated my iphone 4s to iOS 6.1 from the previous iOS (5.1.1 I guess?).
My iMac is version 10.5.8, so I cannot update to the latest version of iTunes... now my iTunes wont regonize my iPhone.
How do I downgrade back to the prevous iPhone iOS so my iTunes will reconize it??!!

You can't. Apple has never approved a method to do that.
If your Mac will run Snow Leopard then upgrading to it with an upgrade of iTunes should get you iPhone recognized by the Mac once more.

I'm sorry, but Apple does not provide a downgrade path for iOS. Because downgrading is unsupported by Apple we cannot discuss it on these forums, but you can use Google to find information on how to install an older version of iOS on any iDevice.
