Can I erase an update?

I recently downloaded the latest iTunes update, but now I can't sync my iPod, it says I have to retore it and update it, and when I try to restore it, a little window appears that says "The iPod cannot be restored at this time because the iPod software update server could not be contacted or is temporarily unavailable. Try again later." I have been with this issue for abot 15 hours and I'm desperate. Please help.
