Can I install Bootcamp by myself? I'm NOT that computer savy but I'm not completely dumb either.... How hard is it?

Read the Bootycamp Installation and Help Manuals. http://www.apple.com/support/bootcamp/
Open Boot Camp Assistant in the Utilities folder. Click on the Print Documentation button. Read it carefully. That should be all you need to learn what to do. I suggest you actually print it out so that you can have it handy when you proceed with the setup and installation of Windows. Note that Boot Camp supports Windows 7.
I have Windows 2000... can I install it and upgrade?
Did you read the documentation as suggested twice above? The documentation says what versions of Windows are supported.
With respect to your original question, if you don't read and follow the documentation you will have problems.

No. Only Windows 7 as I stated.
Check your Booty calls.
You can't install W2000 with Boot Camp, get Windows 7.
Winging it with Boot Camp is a bad idea, at least make a backup before you break something.
And read the manual, you won't regret it.

You have been offered the best advice available. Read the manuals. Look around this forum, many if not most of the questions are due to people not reading the manuals.
You asked if you could do it. I think the consensus is that you can but you musty read the manuals.
Asking off-the-cuff qustions such as your follow up will just interfere with your understanding of the process and eventual success.
Read the manuals and when done if you still have specific questions we all will be happy to help you.
