By mistake I tapped the "International" key and the keyboard switched to Chinese. Is there a quick way to get back to English without cycling thru all the other keyboards? (Everything else is still in English; only the keyboard is changed.)

That's not correct. If you hold down the Globe Key you get a list of active keyboards and you can easily choose the one you want.
The International / Globe Key will only cycle through the configured keyboards. Assuming you don't have every keyboard configured there it should be as simple as tapping it again, maybe a couple more times.
If you don't need the Chinese keyboard, you can go to Settings->General->Keyboard->Keyboards. Tap on Edit, and then on the ➖ for each keyboard you want to remove.
If you only leave one keyboard, the globe key will dissapear from the keyboard.
Thanks everyone, especially Tom (Hi Tom!); of course that's how it ought to work but I didn't think of it. Anyway, I've just disabled all the other keyboards, which I really don't need on the iPad anyway.

Yes it is. It will cycle through whichever Keyboards you have configured or as you put it are "active".
I have 3 keyboards configured. English, spanish, and Emoji. When I hold it down only those 3 keyboards appear. It doesn't show the entire list of available keyboard formats and layouts that the iPad can handle.
My "configured" and your "active" mean the same thing.
Which is why I suggested the poster just tap the key again. Unless they have every supported keyboard configured / active then in at most a couple of taps it should return to the original keyboard layout.
Yes the Tap and Hold also works.
Well, actually while both you and Tom are correct, I had some 8 or 10 keyboards configured/active, so it took more than a couple of taps to get back to English (and so my question was if there was another way). So Tom's solution would have been the one I'd've used, if I hadn't solved the whole problem by just deactivating all the other keyboards.

Sorry, I misunderstood your post as indicating you were not aware of the tap and hold feature and thought that only repeated tapping or removing unwanted layouts would do the trick.

On your keyboard is there a globe? Press it.
Quickest and easiest way would be to restore it if you can't find the U.S. keyboard under settings, international

Yes, even Tibetan, for now. Not doing any language stuff on iPad, very little on Mac these days, as time/effort mostly taken up with health struggles. Still on 10.6 on my MBP. Maybe someday...
Sorry to hear that. Lots of people think 10.6.8 was the best, so you may not be missing anything there...
