If your not on wifi and you are using an Internet related task it is using data.
However, iMessage is free from iDevice to iDevice but does use a small amount of data.

Would , I guess it would be streaming, music from my computer to my iPhone using iMatch take a lot of data-say for example, listening for 2 hours in a car?
It's not streaming from your computer. In the situation you describe you could use as much as 200 - 300 MB.
