Trying to set up my iphone5 email account (me.com).
On the New Account page the Incoming and Outgoing Mail Server Host info is missing. Where is it? Where can I find the .me server info. THANKS!

You shouldn't need to set it up manually. Just turn on Mail in iCloud settings and it will do it automatically.
