I have two iPhones and three iPods, is there a way of selecting different music for each device/user without checking or unchecking the songs every time I synch?

Select whatever playlists you like for each device.
Or select by artist, album, genre, etc

Open itunes, connect iphone, select the iphone, go to the music tab, select whatever you want

You should probably read the manual.
You manage the playlists through iTunes when each device is connected. Select the music tab then select sync selected playlists. Then click on whichever playlist you want and sync. I think I have about 8 different playlists to choose from. Some I have on my phone, some on my regular iPad, and some on my mini.
