Hi,
I quite regularly watch YouTube videos on my iPad 2 via the app. I've noticed that quite frequently I might be watching the video and it suddenly takes a huge drop in quality; everything looks very pixelated. Even if I go back to the point in the video where the quality was good, it stays pixelated. It's not a huge problem, but quite an annoyance. Do you know of any possible fix to this?

I would try a system reset. It cures many ills and it's quick, easy and harmless...
Hold down the on/off switch and the Home button simultaneously until you see the Apple logo. Ignore the "Slide to power off" text if it appears. You will not lose any apps, data, music, movies, settings, etc.
Any possibility that it's the video itself?
The YouTube app, at least the last time I used it, adjusts the video quality based on your connection speed.
