"iTunes will not, however, back up media content from your iOS device, such as music, apps, books, movies, and TV shows."
So how do you backup and restore those? I'm certainly not about to reinstall just about everything, thank you very much.

Those items should be in your iTunes library. You can backup the library by:
iTunes: Back up your iTunes library by copying to an external hard drive
If you restore from iTunes backup, those items will be restored to the iPod if they are in your iTunes library.
If you restore from iCloud backup your iTunes purchased media will also be restored.
So what you're saying is that it's simply not true what Apple is trying to warn us against? Because from your answer, I understand that iTunes does in fact backup everything includings apps and media.
The backup you are referring to is the backup of the iPod that iTunes makes. That is seperate than the iTunes library. I and Apple do not count what is in the library as a backup.
So how *do* you backup the things that iTunes can't??
