When my MB pro is left aone for more than 30 minutes or so, when I return I must login (that's fine), but everything that was open is now closed.
I would like to throw my MB PRO against a wall, pour anything flammable on it, light it and roast marshmallows by the glow of the melting and burning laptop.

Until then, make a new Admin user, reboot into it and see if the problem persists, post back (before the marshmallow session)
From the menu bar, select
▹ System Preferences... ▹ Security & Privacy ▹ Advanced... ▹ Log out after … minutes of inactivity: Off
If there's a closed padlock icon in the lower left corner of the preference pane, you may need to click it to unlock the settings. Enter your login password when prompted.
